Our Kouera Sahraouia beef meatballs are an authentic specialty of southern Morocco, prepared according to ancestral tradition. These delicate meatballs, hand-shaped from finely ground beef, are simmered in a sauce flavored with the citrus notes of beldi lemon (preserved lemon) and the slightly salty flavor of selected olives. Their soft, melt-in-the-mouth texture contrasts perfectly with the tangy freshness of the sauce. Each meatball is carefully seasoned with a traditional blend of Saharawi spices, offering a rich and balanced aromatic palette. This iconic dish of southern Judeo-Moroccan cuisine represents precious know-how, where the simplicity of the ingredients is transformed, through patience and precision of preparation, into a memorable taste experience.
These meatballs are prepared using the traditional Sahrawi method. The beef is first finely ground and then precisely blended with chopped fresh herbs, carefully measured spices, and a touch of breadcrumbs to ensure a perfect texture. Each meatball is carefully hand-shaped according to the traditional size. They are then lightly seared to seal in their flavors before being slowly simmered in a sauce made with melted onions, garlic, beldi lemons, and olives. This gentle cooking time, lasting approximately 45 minutes, allows the meatballs to remain tender while absorbing the aromas of the sauce. It is in this perfect marriage of meat and citrus flavors that lies the secret of this ancestral recipe passed down from generation to generation.
Store in the refrigerator between 0°C and 4°C. Consume within 3 days of production and within 24 hours of opening. To reheat, gently pour into a saucepan and heat over low heat for 6-8 minutes, stirring occasionally to avoid breaking the balls, or in a preheated oven at 150°C for 15 minutes. Can be frozen on the day of purchase for extended storage of up to 2 months.
These meatballs are best enjoyed with fine semolina or white rice to soak up their delicious, fragrant sauce. For an authentic experience, serve them in a traditional deep dish, garnished with a few slices of fresh lemon and sprinkled with freshly chopped cilantro.
