Our Kouera Sahraouia with Tfaia is a noble preparation of kosher Moroccan cuisine. This generous meatball, simmered until perfectly tender, is enhanced by the characteristic sweet and mild flavor of Tfaia. The caramelized onions, melting perfectly, blend harmoniously with the raisins, soft prunes, and delicately candied carrots. This unique combination creates an exquisite balance between the richness of the ground meat and the sweetness of the fruit. The creamy sauce, flavored with cinnamon, ginger, and saffron, envelops each bite in a comforting warmth. This exceptional dish represents the art of Moroccan festive cuisine, where sweet and savory flavors intermingle in a refined symphony of tastes that evokes celebrations and moments of sharing.
This exceptional Kouera is prepared according to the ancestral Sahrawi method, then enhanced by Moroccan Tfaia. The minced meat is first precisely mixed with fresh herbs, spices, and breadcrumbs to form a large ball, which is then gently browned and simmered for a long time over very low heat. At the same time, the onions are slowly caramelized with the spices to develop their natural sweetness. The prunes and raisins are rehydrated in a fragrant broth before being incorporated. The carrots are cooked separately until slightly candied, thus preserving their texture while absorbing the aromas of the spices. The whole thing simmers for at least 2 hours, allowing the Kouera to soak up the flavors and become tender. This patience in preparation is essential to achieve the characteristic richness of this traditional dish, where each ingredient retains its identity while contributing to the harmony of the whole.
Store in the refrigerator between 0°C and 4°C. Consume within 3 days of production and within 24 hours of opening. To reheat, pour into a saucepan and heat over low heat for 8-10 minutes, stirring gently to avoid breaking the Kouera, or in an oven preheated to 150°C for 15-20 minutes. Can be frozen on the day of purchase for extended storage of up to 2 months.
This festive Kouera is best enjoyed with fine semolina or white rice to soak up its delicious sauce. Traditionally, it is served in a deep dish placed in the center of the table for a friendly gathering. Sprinkle with lightly toasted flaked almonds and fresh cilantro just before serving to add texture and freshness. The flavors of this dish improve with age; it is therefore perfect prepared the day before for festive or Shabbat meals. For a complete authentic experience, accompany it with a fresh, slightly lemony salad to pleasantly counteract its richness.
